Ingredients:

  • 1 lb (450g) protein of your choice (chicken breast, beef, shrimp, tofu, etc.), thinly sliced
  • 2 cups mixed vegetables (such as bell peppers, broccoli, snap peas, carrots, mushrooms, etc.), sliced
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, minced
  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon cornstarch
  • 2 tablespoons vegetable oil
  • Salt and pepper to taste
  • Cooked rice or noodles, for serving
  • Optional garnishes: sliced green onions, sesame seeds, chopped cilantro

Instructions:

  1. In a small bowl, mix together the soy sauce, oyster sauce, sesame oil, and cornstarch to create a sauce. Set aside.
  2. Heat 1 tablespoon of vegetable oil in a large skillet or wok over high heat.
  3. Add the protein (chicken, beef, shrimp, tofu, etc.) to the skillet and season with salt and pepper. Stir-fry until cooked through, then remove from the skillet and set aside.
  4. Heat the remaining tablespoon of vegetable oil in the skillet.
  5. Add the minced garlic and ginger to the skillet and stir-fry for about 30 seconds, until fragrant.
  6. Add the mixed vegetables to the skillet and stir-fry for 3-4 minutes, until they are crisp-tender.
  7. Return the cooked protein to the skillet and pour the sauce over the top.
  8. Stir everything together until the sauce has thickened and coated the protein and vegetables evenly, about 1-2 minutes.
  9. Remove the skillet from the heat and serve the stir-fry immediately over cooked rice or noodles.
  10. Garnish with sliced green onions, sesame seeds, or chopped cilantro, if desired.

This speedy stir-fry is incredibly versatile, allowing you to customize it based on your preferences and what ingredients you have on hand. Feel free to experiment with different proteins, vegetables, and sauces to create your own unique combinations.
